When Garlic Turns Blue

This is the result of the small amount of chlorophyll in garlic cloves reacting to an acid.  Don’t worry about it – this temporary pigment change is not harmful and perfectly safe to eat.  Simply allow the garlic to sit in the acidic mixture until it turns a darker shade.
