BAKED SALMON EN CROUTE

This is the absolute perfect dish if you want to create something really really special that looks amazing but it actually quite easy.  I admit this is more time consuming then difficult as you need to cut all the individual pastry scales out, but the effect if well worth it.  I used individual fillets when I cooked this, however you could use a whole salmon fillet if you prefer.  This recipe also works really well Jew fish if salmon is not your thing.

INGREDIENTS

2-3 large fillets of salmon, skin removed (or one large whole pin boned salmon fillet)

3 medium zucchini, cut into Julienne

3medium carrots, cut into julienne

5- 6 sheets of good quality puff pastry

Salt and pepper

5 egg yolks, beaten

1 large bowl mixed green leaves

¼ cup vinaigrette
