I love this
This is a nice and easy 30 minute recipe that has lots of flavour. I really like rice dishes where the rice is cooked with the rest of the ingredients. It adds another dimension to the tastes.
If you want to join me you will need:
1 tbsp oil
4 chicken thighs
1 small onion, chopped fine
2 sticks of celery sliced in half and chopped fine
Half a yellow pepper, diced fine
100g basmati rice
350ml chicken stock
1 red chilli
225g courgettes chopped small
1 tbsp tomato puree
Heat the oil in a frying pan and brown the chicken. Remove.
Stir in the onion and celery and fry for five minutes or so. Add the yellow pepper and give it another couple of minutes.
