MIDDLE EASTERN BROCOLLI SOUP

This is a really terrific soup that is vibrant, complex and full of texture.  The Middle Eastern flavours in this soup really shines, creating an explosion of flavours with every spoonful.  The tahini cream packs a punch with regards to the garlic, so feel free to reduce the amount if garlic isn’t really your thing.

SERVES 8

INGREDIENTS

750 g broccoli

1 tbsp. butter

1 onion, finely chopped

1 litre of chicken or vegetable stock

3-4 sprigs of fresh thyme

Pinch of grate nutmeg

Pinch cardamom

1 tsp za’atar

2 tbsp. tahini paste

4-5 tbsp. finely chopped parsley

70 g pine nuts, toasted, roughly chopped

Sprinkle of sumac to serve

TAHINI CREAM

2-4 garlic cloves, coarsely chopped

1 tsp sea salt

2-3 lemons, juice only

150 ml tahini paste
